Let them explain it to you…
First, we are traditionalists, and you can taste it. The process has never been negotiable, from day one. We make barbecue the way it was originated, with nothing but fire. We don’t have any electronic temperature controls, we don’t have any gas or propane assistance, we don’t even have shelter from the elements. Everything is done on our outdoor offset all-wood smoker using oak.
We make what we call, same day BBQ. If you come in for dinner and get a pulled pork sandwich, that pork shoulder was put on the smoker 8-12 hours prior. Nothing is reheated, you cannot replicate or substitute the flavor of meat fresh off the smoker. We don’t get a lot of sleep but it’s totally worth it!
All of our rubs and sauces are made in house, we have fine-tuned those recipes over the years to go perfectly with our smoked meat. We keep it simple, the star of the show here is the meat and the smoke.
Lastly, we love and respect the history and tradition of this craft. It brings people together, it’s fun and it represents happiness. Nothing is more rewarding than someone coming up to us with a big smile and saying how much they enjoyed it. You, the customer, is why the process is never compromised.
